Du pain, du vin, and du vegan boursin cheese? Mais oui!

I have been testing this rich creamy spreadable vegan cream cheese recipe before, but it was a different version of it, involving smoked paprika and no herbs and has been a successful experiment. I must say this is one of my favourite vegan cheeses recipe (along with the very popular carrot and potato vegan cheese recipe that took over the whole internet this year!). It’s really easy, it takes about 10 minutes to make. Not a huge amount of ingredients required, and absolutely fantastic in wraps and bruschetta breads! I will try and make more batches with different flavours (already have a few in mind) and share it with you very soon

vegan boursin cheese in a simple wrap

Ingredients

  • 1 cup boiled raw unsalted cashews
  • 1/2 cup raw almonds
  • 2 tablespoon tapioca flour
  • 1/2 cup nutritional year
  • juice of two lemons
  • 3 teaspoons herbs and garlic salt
  • 4 fresh sage leaves
  • a handful of fresh flat parsley
  • 1 cup of soy milk (unsweetened)
  • 2 tablespoons of extra virgin olive oil
  • dried mixed herbs for the external coating

Instructions

  1. No need for soaking cashews and almonds overnight: simply boil them together for ten minutes, drain the liquid and let them cool for a few minutes. Peel the almonds:the almonds' peel can be squeezed out very easily after boiling.
  2. Add all the ingredients in the blender, if the mixture is too thick add some little soy milk.
  3. Blend to smooth creamy consistency (it has to result similar to creme freche)
  4. pour the mixture into a pan on low heat and start stirring continuosly for about 10 minutes until the consistency changes to thicker gooey sticky quite compact dough.
  5. Oil a plastic container of your choice and sprinkle some dried or fresh herbs all around it.
  6. pour the mixture in it, and gently press it in the container with a spatula
  7. leave to set in the fridge for a few hours, and ...voila'! Your vegan-like boursin cheese is ready to be served and it looks great!
